Satsuma Jelly

As a native of Louisiana, I had to sneak this one on our list.  We don’t raise satsumas in El Dorado, Arkansas, but we sure are proud to support the farmers of my home state who do! Satsumas – a type of mandarin orange – came into Louisiana in the 18thcentury by Jesuits who brought the fruit from Asia to their plantation north of New Orleans.  Our spin on this historical fruit is to remove only the seeds while rendering the juice so each bite delivers a whole fruit taste and a distinctive bright citrus punch.  Try it with pork and any grilled meat.  It’s the perfect complement!
